Niyama launches underwater Nikkei dining experience

Niyama Private Islands Maldives has introduced a new tasting menu at its underwater restaurant Subsix, featuring Japanese-Peruvian haute cuisine.
 
Subsix has been the setting for various experiences, including champagne breakfasts and midnight glow parties.
 
The new Nikkei tasting menu combines Japanese tradition and precision with Peruvian boldness and artistry, offering five courses that showcase the riches of the Indian Ocean. Highlights include scallop ceviche, wahoo tartare, and buttery cod with crisp asparagus.
 
To enhance the experience, guests can enjoy a curated selection of sake or fine wines, carefully chosen by Head Sommelier Mayank Sharma.
 
Executive Chef Thierry Vergnault, trained in classics at the Four Seasons Hotel George V in Paris, has conjured up each dish, which has been expanded with positions worldwide. The new menu is a once-in-a-lifetime experience at Subsix.
